Don’t Waste Your Scraps: Broccoli Stem & Feta Hummus

Do you ever feel like you waste a lot of food scraps and wished you knew what to do with them – besides composting?

Here is a simple, versatile, and SMART way to ensure you are reducing food waste to a minimum.


1 large head of broccoli, stalk on
¼ cup feta cheese
1 large garlic clove (roasted, if possible)
Drizzle of tahini
¼ cup olive oil

1. Peel broccoli stem and chop roughly.
2. Add all ingredients except oil to food processor and pulse until combined.
3. Drizzle oil while pulsing mixture until combined.
4. Enjoy with crudité, crackers, pita chips, on crostini…
